Olive Mill
Our cooling water system cleanses the olives of dust and impurities while simultaneously lowering their temperature. This initial cooling step is crucial for locking in the natural fragrance of the oil.
Crushing
Olives are crushed into a paste, with the process adapted to the specific cultivar and ripeness to achieve a robust bitter-pungent profile that preserves the oil’s aromatic qualities. Our enclosed, refrigerated machinery protects the paste from light exposure and heat. Kneading follows, separating oil from water and solids.

Extraction and Separation
The olive paste is then spun in centrifuges to separate oil from water and solid residues. At this stage, the olive oil is pure and ready for consumption.

Sanitization
Thorough cleaning and sanitization of all equipment after each batch are fundamental to guaranteeing consistent quality and hygiene throughout production.
Storage and Packaging
Proper storage is critical to preserving the antioxidants, flavors, and aromas of organic extra virgin olive oil. Our stainless steel tanks are temperature-controlled, shielded from light to maintain freshness. We bottle the oil in dark glass, tins designed specifically to protect and conserve the product’s quality.
