Olive Grove
Our olive grove is guided by two fundamental principles: preserving native olive varieties and nurturing environmental sustainability.
Ancient Olive Trees
These venerable trees stand proudly as living testaments to the past, their graceful forms blending harmoniously into the landscape, embodying both history and natural beauty.

Soil Management Practices
We employ sustainable soil care techniques such as cover cropping, green manuring, and mulching. These methods help safeguard root systems, retain soil moisture, and enrich the earth with vital organic matter.

Our pruning follows the polyconic vase approach, honoring the natural growth patterns of the trees while maximizing sunlight penetration and air circulation. The foliage remains dense near the base of each branch and gradually thins toward the tips.
Pest and Disease Management
Through careful monitoring and the use of pheromone traps, we effectively manage insect populations, protecting our crop with environmentally friendly methods that minimize chemical intervention.
Harvesting
Our harvesting technique uses specialized catch nets placed beneath the branches, allowing olives to drop gently without touching the ground. This careful method preserves fruit integrity and cleanliness, echoing traditional practices that, despite being labor-intensive, ensure a high-quality, sustainable harvest. The olives are transported to the mill within hours of picking, guaranteeing freshness and flavor.
